Kick off the chilly days of fall with some tasty warm soup recipes the whole family will enjoy. 

Italian Sausage Soup

Ingredients

  • 1 tbsp olive oil
  • ½ lb Italian sausage
  • ½ medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 stalks celery
  • ½ cup uncooked orzo
  • 6 cups chicken broth
  • 15 oz diced canned tomatoes
  • 1 tsp Italian seasoning 
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Cook sausage in a soup pot on medium high, add oil if needed. Transfer out of the pot and set aside.
  2. Add olive oil if needed and add onion, garlic and celery. Cook until tender, stirring as needed. Add sausage back into the pot with orzo.
  3. Add chicken broth, diced tomatoes with juice and seasonings. Bring to a boil then reduce heat to medium low and simmer until orzo is cooked through.

Butternut Squash Soup

Ingredients

  • 2 tbsp olive oil
  • 1 lrg yellow onion (chopped)
  • ½ tsp salt
  • 1 butternut squash (cubed)
  • 3 cloves garlic
  • 1 tbsp sage
  • ½ tbs rosemary
  • 1 tsp ginger (grated)
  • 3-4 cups veggie broth
  • Pepper

Instructions

  1. Heat oil in a large pot over medium heat. Add your onions, salt and some fresh ground pepper. Saute until onion is softened. Add your squash and cook 8-10 minutes.
  2. Add garlic, sage, rosemary and ginger. Stir and cook until fragrant. Add 3 cups of broth and bring to a boil. Cover and reduce heat to a simmer. Cook until squash is tender.
  3. Let cool slightly, pour into a blender and blend until smooth. Add more broth if your soup is too thick. Season to taste and top with parsley, and crusted bread if desired.

Chicken Gnocchi Soup

Ingredients

  • 1 lb shredded chicken
  • 1 tbsp olive oil
  • 4 tbsp butter
  • ¼ cup flour
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 6 cups chicken broth
  • 2 cups milk
  • 1 cup carrots (shredded)
  • 2 tsp parsley
  • 1 package gnocchi
  • 1 cup spinach
  • Salt and pepper 

Instructions 

  1. In a dutch oven or crock pot, melt butter and olive oil. Add onions, carrots and garlic. Cook until onions are translucent.
  2. Whisk in flour and let it cook for a minute. Slowly stir in chicken broth and summer until it starts to thicken. 
  3. In a pan, cook your gnocchi according to the package, drain and set aside.
  4. Add milk to your veggie and broth mix and bring to a boil adding seasonings. Once at a boil reduce heat and add gnocchi, spinach and chicken. Simmer until heated throughout and thickened.
