First introduced in the 1970s, the slow cooker was designed for moist-heat cooking. Still operating the same way today, the slow cooker produces steam which condenses on the lid and then returns into the contents of the pot. Recipes are essentially cooked at a relatively low temperature over an extended period of time (usually 4-6 hours).
