Cobb Salad Recipe

Enjoy this easy and healthy cobb salad recipe! To save time, prepare it with already shredded and washed lettuce, store-bought roasted chicken and already cooked bacon.
Cobb Salad RecipeINGREDIENTS

Dressing:
1/4 cup (60 ml) white wine vinegar
1/4 cup (60 ml) crumbled blue cheese (optional)
1/4 cup (60 ml) olive oil
1/4 cup (60 ml) mayonnaise
1/4 cup (60 ml) chopped fresh chives
1 tablespoon (15 ml) honey
1 clove of garlic, finely chopped
Salt and pepper

Salad:
2 1/2 cups (625 ml) cooked chicken broken into pieces
2 tomatoes, seeded and cut into thin wedges
1 avocado, sliced
6 cups (1.5 litres) shredded romaine lettuce
4 to 6 boiled eggs, cut in half
6 slices bacon, cooked and chopped


PREPARATION

Dressing
In a bowl, combine all the ingredients with a whisk. Season with salt and pepper.

Salad
In a large serving platter, spread the chicken in a line at the centre. Place the tomatoes and avocado on each side followed by the lettuce. Top with the eggs. Sprinkle with the bacon and drizzle with the dressing.
