Quinoa Breakfast Bites

Here is a quick and easy-to-make breakfast recipe that’s healthy and delicious :) Don’t have a lot of time in the morning? Double up the recipe over the weekend so you can have them ready for the week. All you’ll need to do is heat them up in the toaster or microwave… perfect for school or work days. Bon appétit!
Quinoa Breakfast Bites

3 eggs
1/2 cup spinach (drained)
1/4 cup feta cheese
2 TBSP parsley
1/2 onion diced
1 TBSP butter
1 cup cooked quinoa
2 cups chicken broth
salt and pepper to taste

Preheat oven to 350 degrees.
1) Cook the quinoa according to package using the chicken broth, drain and set aside to cool.
2) Put the butter in a small pan and fry the onions until translucent.
3) In a bowl, place the chopped parsley, spinach, onion, quinoa, feta, and eggs. Season with salt and pepper, and mix well.
4) Make sure to grease a muffin pan well with some spraying oil, or use a silicone muffin pan. Spoon about 1 1/2 TBSP and lightly packing it in.
Bake for 20 minutes, or until nice golden brown.
